Controlling Dough Temperature With Water

Bread bakers who get consistent results across a year are usually doing one thing amateurs are not: calculating the temperature of the water rather than using it from the tap.

Why Dough Temperature Matters

Fermentation is a biological process, and its rate depends heavily on temperature. A dough finishing mixing at 24 degrees Celsius ferments considerably faster than one finishing at 20.

That is why the same recipe proves in ninety minutes in July and three hours in January, and why timings in books never quite work.

Controlling the finished dough temperature makes the schedule predictable, which is most of what consistency means in bread.

The Tools It Needs

A thermometer for the flour, the room and the finished dough, and a scale for everything else.

The Calculation

Bakers use a desired dough temperature, typically somewhere in the region of 24 to 26 degrees Celsius depending on the bread.

The method is straightforward: multiply the desired temperature by the number of temperature factors, then subtract the ones you cannot control.

  • Flour temperature, measured with a probe in the bag
  • Room temperature
  • Preferment temperature, where one is used
  • A friction factor for mixing, which adds heat
  • The remainder is the water temperature to use

The friction factor is estimated the first few times and then refined from experience, which is why keeping notes matters more than getting it perfect initially.

Measure the Finished Dough

The step that turns the calculation into a system. Take the temperature of the dough immediately after mixing and write it down alongside the water temperature you used.

After a few bakes you will know your own friction factor precisely, and the calculation becomes reliable rather than approximate.

Ice Water in Summer

The practical consequence. In a warm kitchen with warm flour, the calculation frequently calls for water considerably colder than the tap provides.

Cold water, or water with ice weighed in and the ice counted as part of the water weight, is how bakers manage summer.

Winter Is the Opposite

Cold flour stored in an unheated cupboard drags the dough temperature down, and warm water compensates.

Not hot water, though: anything much above 50 degrees begins to damage yeast, and directly poured hot water on yeast will kill it.

Why This Is Worth the Effort

It converts bread from something that works some weeks into something that works every week, with the same timings.

It is also the single clearest example of why serious baking needs both weight and temperature rather than either alone.
